Rolled Oat Bars

No Bake Coconut Oatmeal Energy Bars

No Bake Coconut Oatmeal Energy Bars – makes 8-12

1 3/4 cup rolled oats

1/2 cup shredded unsweetened coconut

1/2 cup dried cranberries or raisins

1/4 cup raw sunflower seeds or pumpkin seeds

2 Tablespoons ground flax

2 Tablespoons maca powder (optional)

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup maple syrup

1/2 cup almond butter

1 Tablespoon coconut oil, melted

1 teaspoon vanilla or almond extract

In a large bowl mix all the dry ingredients.  In a small bowl mix the maple syrup, almond butter, oil and extract.  Add to the dry ingredients and mix until incorporated. 

Press all into a wax or parchment paper lined 9″ pan and place in the fridge for about 30 minutes to harden.  Remove from fridge and cut into bars.  Keep in fridge or at room temp for about a week.
