The Perfect Avocouple

Avocado + Toast.

Okay.  So.  Avocado toast doesn’t necessarily count as a recipe, but I’ve been having it as a snack, literally every day, for the past 6 months.

Seriously, if you’re not having avocado toast you’re missing out.  

I know, I know; it’s the trendy new snack that all the up and coming cafes are selling, but it’s just TOO easy not to make at home.  All you need is a few simple ingredients, a toaster (or even an oven!) and you’re good to go.

  • 1 large ripe avocado
  • 2 slices whole grain bread
  • ½ tbsp extra virgin olive oil
  • ½ lemon juiced
  • Sea salt

Generally what I’ll do is take some Ezekiel Flax Bread (any whole grain bread works) and set it in the toaster until it browns.  

As the bread is toasting, get all of the good stuff out of the avocado and place it in a mixing bowl.  From there, add in the lemon juice and EVOO and mix to your liking.  I like to keep big chunks of avocado for texture, but if you want more of a spread mash it until it becomes uniform.

Once the spread is made and the toast is your perfect color, bring on the avocado.  Sprinkle some sea salt on top to taste and BOOM — you’re done.

Simple right?  

This 5 minute recipe is packed with a ton of healthy fats essential for maintaining healthy blood sugar and insulin levels.  The best part is that you can have it at any time of the day.  Breakfast, lunch, snack, or dinner is always the best time for some avocado toast.    

Okay, I’ve been eating avocado toast and this is getting boring.  How can I make it better?  

Totally get that.  

You may not even be that into the taste of avocado (I just assume because I’m obsessed), but you want to reap the heart-healthy benefits they provide.

The first and easiest variation I will do is to simply chop some fresh cilantro up and place it on top.  This will give it that fresh, crisp taste that will make it palatable.  

Second, you can treat the avocado spread as a guacamole and get creative from there.  If you’re into spices, top your toast with some some crushed red pepper flakes or diced jalapeños.  That should do the trick.  If not, you can always add in some lime juice to flavor or diced onions for crunch.

There are no boundaries, be yourself.
